I can remember always looking forward to having these little fritters after we had enjoyed the corned beef. I found that last little half in the freezer today and thought I’d make up a batch of corn meat fritters for lunch. The batter is just a simple Pikelet recipe without the sugar added. Cornmeal is often used for corn fritters, but I like to reserve that for hushpuppies and hoecakes myself, since I prefer a corn fritter to be more, well, light and fluffy, almost a corn puff really. They are a lovely memory from my childhood. Mum always used to make them with leftover roast meat, corn, grated vegies or whatever else just seemed to be lying around. It is lovely and light and holds the meat, corn and tomato together beautifully, without being too stodgy.
